«Les Macarons de la Sécurité Alimentaire» is an online information service absolutely FREE to consumers and restaurateurs.
Restaurants are classified into 3 categories:
- 1 macaron : establishment respecting the basic principles of Food Safety catering
- 2 macarons : institution involved in an effective approach Food Safety catering
- 3 macarons : establishment highly engaged in a process of Food Safety in catering and yearly followed by an expertice office external to the company (since at least 3 years).
Achieving each level is subject to the validation of a number of comformity criteria.
The criteria adopted for the selection related, among others :
- Establishing specific procedures adapted to the type or operation
- Continuous training in hygiene and food safety
- Presence of a "Plan de Maîtrise Sanitaire" in the restaurant
- Being followed by an external expertise office specialized in food safety.
« Les Macarons de la Sécurité Alimentaire» is a declarative guide based on the documents provided by professional restorers themselves, according to predefined criteria , no control is carried out on site by the association.
However, the criteria are analyzed and evaluated for their relevance by veterinarians and / or food engineers from an expertise office specialized in Food Safety and leader in France.
